This is the perfect time of year to compose this dish with all the fresh vegetables available at the farmers market. Colorful, bright and filling. Think Meatless Mondays!
1 pint cherry tomatoes, halved. Use mixed if you can find them.
Large handful fresh Basil finely chopped
Sprinkle of Maldon Sea Salt
Healthy pour of Vinagro Spicy Red Wine Vinegar ( or Lemon Vincotto if you prefer)
Big Glug of Giachi Primolo
Handful of skinny green beans
A ball of good fresh mozzarella
Whisk together vinegar, EVOO and sea salt in a small bowl. Add chopped basil and cherry tomatoes. Let marinate together.
Bring a pot of salted water to a boil and prepare an ice bath for green beans. Boil green beans 30 seconds or so then place in ice bath.
Cut mozzarella in slices and arrange on plate. Drain green beans and place on top of cheese. Top with dressed cherry tomatoes. Serve with toasted bread. Serves 2
