Moulin des Ombres “Mill of Shadows” is produced by Jean Rene de Fleurieu. The olive pro­duction was transformed in to a very high quality operation in 1996 but this mill is part of the long standing Chateau Montfrin dating back to the 1600’s. Perched above the Rhone river valley about 20km west of Avignon. A rich blend of traditional varieties is the key to this oils complexity and flavor. The oils are very fresh and have both French and Italian taste. The French varieties offer up lots of green tomato, olive and banana flavors but Jean is looking to very early harvests with a high percentage of green olives that of­fer up more firm oils with more fresh green vegetable elements.  A blend of 30% Calian, 30% Petit Ribiers, 40% blend of other varieties. Produced from entirely green olives har­vested early. Color is deep gold with green edges. Delicious aromas of sage, asparagus, artichoke and green banana.

Suggested uses:  legume appetizers, salads, pasta with salmon, grilled poultry and goat cheese.
